Why, because 3N is 2 less tricks than 5 and you have 8 of those off the top?

3NT here, 5C needs more from partner, and will only ever gain because it is easier for partner to bid slam when it's right.

Yes. If 5!c is working, then either partner has a spade stop, or has EVERYTHING else you need. Also, it seems they'll be leading diamonds.

3 NT also. If they both have full value for their bids, you're probably going down. But if not, pard just might have a card useful for making 9 tricks. It's well worth the gamble.
