Why on earth did GIB W discard the ♣J? Surely it knows that it's hearts are guaranteed to be irrelevant for the rest of the play...

GIB doesn't know about upgrading 14 counts to 1NT, so it knows that South has to have 2 of these cards: ♦Q, ♣KQ. Whichever pair it has, the ♣J is irrelevant.
