Do you bid 1S, planning to follow with 2S if opps compete to the two levels or you bid 2S now? Which one should be stronger?

2♠ isn't really an option since that is invitational. You have to bid 3♠ or 1♠ then compete.

Well if you think 3S does not show a purely defensive piece of crap then bidding 3S is not getting your hand off of your chest, it's misdescriptive. I'm very happy to pass if it goes 4H on my left pass pass, and I am very happy I didn't induce partner to save.
