I'm familiar with Rubinsohl for NT interference, but how is it best adapted for 1C interference? For instance, are all the 2N+ bids GF? Here's a structure for NT interference...

Are you sure about 3N not showing a stopper? In all the versions of Rubensohl I have read about (including this one that uses 2N a la Lebensohl), 3N always promises a stopper.
The version I have played is over 1C interference is:
Natural interference at the 2 level (starting with 2C):

X: Takeout, not GF unless followed by cue
2x: NF, natural
2N+: Transfers, showing at least invite+ values
Artificial interference at 2 level (no known suits, ex: SUCTION):

X: GF, tends to be balanced

2N+: Transfers, GF

No, I'm not sure about it and I think there's lots of versions of Rubinsohl, but I thought that "slow showed stopper" a la 2N then 3N whereas an immediate 3N denied a stopper (and presumably showed tolerance for other suits). I've never really liked the 3N bid, but I'm not sure what else to do over 2H interference with xx xxx AKx KJxxx. I mean, if dbl is takeout.

One approach is that transfers into their suit always show GF hands that are stuck for a bid (you can play X and then cue over opener's 3♣/3♦ shows the GF Stayman without stopper hand).
Another way of doing it is to bid 2N -> 3C and then cue bid 3H to show the problem hand...

It seems like one important consideration is communicating the most relevant information before the next hand raises.
It makes sense to me that 1N (2H) 3D shows 4S without a stopper while 1N (2H) 2N (P) 3C (P) 3H is stayman with a stopper. The latter hand always has 3N as an option even if next hand were to raise hearts.
I'm also seeing dbl as takeout for three suits and not just a negative for the other major, because there's lots of hands like Kxx xx Kxx xxxxx where one would like to have a takeout bid.
You raised an interesting question about dbl and then cue.
