I don't know if I was being unnecessarily ethical by avoiding making use of the UI, or if my evaluation is just bad. Partner is a passed hand and is now making a slam try—don't I potentially have two diamond losers?

Yes, but it's in unlikely opposite 20-21.
Confirm ♠ with a 4♣ 1st/2nd round control rather than presumably showing 46xx.
Perhaps showing (64)xx it is better to reserve 4♦ as a transfer to the other Major after a positive response to Stayman. That way opener gets to set trumps and 2 quick losers can be resolved from there.

I am so lost in my own NT structure that I forget the traditional approach for showing game going 6-4 majors opposite 2NT. Is it really Stayman?

I indeed believe you should start with Stayman, then 3S over 3D to show 5H and 4S, then 4H over 3NT to show some slam invite (otherwise you would just bid your H). I guess you can use transfer as well if you wish.
And also quite useful to keep 4m over Stayman reply to be natural, SI, implying the other M along a 5-cd suit in m where slam could be easier than in NT. Of course if partner is loaded in the om and their own M, they can revert to 4NT.

That sounds almost like my own NT system
I was more interested in what I/A are being taught or what BWS has/had to say.

Over 3S. Then 6S
Granted bias.seeing both hands But I do think that is what I would bid

I think it's pretty standard that four of a minor is natural here (not cuebid for spades) and 4♥ is a slam try in spades (saying nothing about hearts). I'd bid 4NT with the East hand (pretty ideal hand for keycard with all the 2nd round controls locked up).
This is certainly what Elianna teaches her intermediates, but obviously she and I come from similar bridge background (and play together a lot) so we have many of the same ideas.
