I simply need to know if, once all are in their seats, I can leave that table and go to a different table, or MUST I remain there as a kibitzer?

If you leave you CAN'T remain as a kibitzer. If you leave, you leave. You can't be at two tables at the same time.

If you're the only person who knows how to be a host - resetting scores, requesting/denying access, and so on - then you probably shouldn't leave until (or leave and then come back as a kibitzer until) you've taught the table what host does.
But no, when you leave the table doesn't go away. The four people at the table can still keep playing.

I was worried that if I set up 4 savvy bridge players who are just not familiar with the actual set up, that I would not be able to leave them to their game and get one of my own at another table.
