So looks like open book at the 3 card ending.
How does GIB E err playing low S at the end?

FWIW, I've never seen GIB error in a 1 card ending.

If you look at the description of South's 3♠, it includes 8HCP, so South need ♥J and ♦J to get up to 8 HCP. Even though South is dummy and in theory, East should be able to see all of dummy's cards, maybe the simulation gives South ♥J in which case, it doesn't matter what card East plays.

Or maybe these are basic bots and the bot is randomly playing the lowest card possible just because ....

Either scenario is possible.
