Weird bidding all around but 4♦ is really an awful jump. I know that my "takeout double" exacerbated matters somewhat, but why can't N just double instead of deciding to play in Jxxx in a minor (4D is described as a 5-card suit)? Also what's 2NT instead of 4D?

... and I can prove it with my usual, flawless logic.

Note that Gib is loyalty model.
1- If me,I can't promise 4-card ♠ without extra values,I don't make takeout.
2- For this hand,I only overcall 2♣,never double,I am not willing to torture my partner.
3- After 2♥,Gib N should make responsive double, let partner pick up a minor.I think here is a defect of Gib CC.
So no double,no trouble.

I agree with Lycier's points 2 and, especially, 3. This is a textbook responsive double.
Given that you are not forced to act, 2NT is natural barring some other agreement
