I'm not sure I understand the question. I can't tell if you're asking about how to edit Full Disclosure convention cards, or maybe you don't understand that there are different types of convention cards (BBO and ACBL convention cards don't have multi-step mode, only Full Disclosure cards do).

I am referring to SAYC ( standard American yellow card ). I have seen the summary and what you refer to the full disclosure mode.
What I am not able to do is switch between these at will

There are three SAYC convention cards in the Stock Convention Cards list:

ACBL SAYC: This is SAYC in ACBL convention card format
SAYC - Standard American Yellow Card: This is SAYC in the older BBO format
SAYC: This is SAYC in Full Disclosure format

They're not connected to each other in the software, and there's no way to switch between them.
