Why does North bid ♦ 3 times (including 3♣ bid) instead of showing his clubs also? Why does the 3♠ description include "5-S" instead of "5S" or "5+S"?

In deed why does GIB think there is any benefit to continuing past 2NT with crappy counterbalance hand- pass is only real option.

GIB really hates letting you play NT when it has a singleton, even if it's opposite your 5-card suit.

Wasn't this bug regarding the 3♣ bid supposed to be fixed? That description is wrong.

I think once you deny 6 spades by rebidding NT, GIB's never going to believe you no matter how much you try to convince it. It's like the strong hand takeout X where, no matter how much you bid the suit of your single suited hand, GIB still insists you must have 3+ cards in the other suits.
3S probably confused GIB even further because if 3C was a transfer to diamonds, you just superaccepted and agreed diamonds, hence all its further diamond bids. I'm surprised it didn't bid 6D
I guess one has to stick to the "book" that GIB reads from, whether you hate the bids or not.
