I don't know 2/1 and I'm not inclined to learn it so I'm interested to know if it's possible to get GIB to play SAYC.

I tried that but it doesn't seem to engage in conversation. Is there a special syntax one needs to use?

Is this a joke? If not: No, GIB only plays one system. My guess is it would be a major system overhaul to make GIB flexible w.r.t. system. Some day you will be able to program GIB to play your own favorite system, though.
The world would be such a happy place, if only everyone played Acol :) --- TramTicket

I'm sure the stand alone version of GIB can play SAYC. (GIB can play several systems.)
I remember a post from Fred years ago, that maybe one day this feature will be included into the BBO Version, but that it has no priority.
