1. Definitely 4NT rather than 5♦, both because of the risk of a club ruff and the possible need to throw hearts on diamonds. x AKxx xxx KJxxx illustrates both.
2. I would play double as takeout-oriented. That's a possibility here, and preserves the possibility of defending when it's right. However, partner won't expect a heart void, and there's too big a risk that he'll take it out to 5♥. I bid 4NT, two places to play.

#1 - That is exactly the hand partner had. I bid 5♦, unfortunately.
#2 - I also bid 4NT. This resulted in -500 when +300 was possible defending 4♠x.
