Diamond suit often gets lost in this 2/1 style.

Game often gets lost when you underbid by a king.

2♠ would still be a bit of an underbid even with AJxxxx x K10xx xx. I think I'd bid 3♦ with that.
On the originally posted hand, I'd bid 3♣, planning to bid game in diamonds unless I heard of spade support.

I guess my real question was what to do with the hand if you weaken it enough that you're unwilling to force to game (hence the "invitational" reference). For example,
AJxxxx
x
KTxx
Jx
or
KJxxxx
x
JTxx
Kx
Any more thoughts?

A little weaker, and I'd raise to 3♦.

Show the fit and invite.
If 2S would show an inv. and 6 spades,
this would be fine as well, but I wont by
pass 3D to show a 6 card suit.
