I hope noone reads this, but I would double (it is a bit sick but with a doubleton spade and 5 hearts...). It seems South should bid 3♣ not 2N, which North would correct to 3♦.

Agree with that.
Please note: I am interested in boring, bog standard, 2/1.

The fifth heart and the support for opener makes this a more or less mandatory negative double IMO.
Agree that south really should avoid the nasty 2NT rebid. Better show hand type with 3♣.

North forced 2NT or higher with an 8-count P.O.C., and South has a player. Whether game should be bid or not is one question. Sometimes fortune smiles. However, once North commits to that BIG double, South's bare minimum 2NT response seems a tad weaker than I'd expect from South. 3♣ has a serious merit of allowing a courtesy correction, after which 3NT should be the practical rebid by South.
"Gibberish in, gibberish out. A trial judge, three sets of lawyers, and now three appellate judges cannot agree on what this law means. And we ask police officers, prosecutors, defense lawyers, and citizens to enforce or abide by it? The legislature continues to write unreadable statutes. Gibberish should not be enforced as law."
