I know I'm not a scientific bidder but how come I never have KQxxx when the bots bid a slam?

Well,
(1) the odds of either you or your partner being dealt KQxxx of trumps in their slam is only ~4%.
(2) odds are very low for the opponents to be pushy on an 8 cd fit missing KQ of trumps to get to the slam anyway, they'd want no losers elsewhere.
So you aren't supposed to find yourself in this position very often at all.
So maybe just don't push to 30 something percent slams?

Well, in my defense I thought that I'd be about 75% with a double finesse in trumps as the bidding showed a double fit and I'm prime.

Keep in mind that arcade boards are "best hand" so your partner has at most 15 HCP there, more likely less. Your hand has the most points at the table. This info helps when pondering borderline games or slams. For instance, let's say you've got 12 HCP and your partner opened. Knowing that you have the best hand at the table tells you that he either has a distributional 11, or he has 12, he won't have more.
