I'm using the preview version, per "Try a preview of the next generation of BBO software" on the home page.

Mostly it works well, but I have not figured out how to see the cards played to the previous trick when I have not yet played to the current trick. This is straightforward in the regular web version of BBO - I click on the stack of tricks.

Have I missed something, or is this a feature that's not yet implemented?

It's the same, except the stack of tricks has been replaced by simple counters of tricks in each direction:

Click on the cards in that diagram.

Got it - thanks!

Next question:

When I played on my laptop, using a trackpad, sometimes the display becomes bigger, hiding parts from me. I presume this is due to some trackpad gesture I've made inadvertently, but I cannot figure out how to ensmallen it. I'm using Chrome on a MacBook Pro.

Go into System Preferences -> Trackpad -> Scroll & Zoom. There you can enable and disable various gestures. It sounds like you zoomed in.
