Humans sometimes do this too... showing Q when they actually have extra length, which makes having Q less relevant.

I hope not... I hope 5♠ would be understood as "we are missing two keycards", not "we are missing one keycard and the trump queen".

I wonder if GIB always shows the Queen with just 1 extra card, or if it's 1 + Jack or 2+ extra cards.

It's supposed to be whenever you have 10 cd fit from the previous bidding, not any specific number of extra cards. Given the high percentage of 2-1 splits you aren't supposed to be worried about missing the QJ for grand purposes.
