Can it do this already? I can't find a way - as far as I can tell, GiB only operates when the play is over, after which point there seems to be no way even to manually backtrack, and see what tricks were available if you'd played in s instead of s or whatever.

If GIB can't do it, then Double Dummy Solver by Bridge Captain can.

If played by other people in different strains you can use their hands.

in the address bar when you run the handviewer, find the contract bid that will look something like this.. if the contract was 3NT

Change mb|3N| to mb|4S|

If his partner had bid spades earlier, it might have the wrong hand as declarer... play with the bidding part and you can probably figure out how to get the contract played from the side of the table you want. Of course, an easier solution is to use Double dummy solver, already mentioned in this and other threads.

Another way: click Export deal, Hand editor, and then just click the Left arrow button multiple times to backtrack on the auction you had. Then re-enter any auction you like, and click GIB to see how it would've turned out.

You can do the same thing in Handviewer by altering the URL.
